Horčica a jej nezameniteľná výnimočnosť

Napadlo by vám vôbec nazerať na horčicu ako na niečo, čo dokáže prospievať nielen varenej strave ale dokonca zdraviu? Už praotec všetkých lekárov, Hippokrates, spomínal horčicu v súvislosti s tráviacimi problémami.

Využívala sa dokonca ako veľmi účinný protijed. Výnimočnosť horčičného semena doslova nepozná hraníc. Viete aké sú jej hlavné zdravotné benefity? Na úvod však treba zabŕdnuť do teórie a spomenúť, že horčica je prakticky výsledný produkt horčičných semien. Pôvodne teda horčica vznikla zmiešaním týchto semien s hroznovým muštom alebo octom. Dnes vzniká horčica takmer rovnako, len hroznový mušt nahrádza voda, olej či spomínaný ocot.

Horčičné semienko ako rastlinka

Horčica biela je jednoročná rastlina, ktorá kvitne žltým kvetom a dorastá do výšky jedného metra. Plodom horčice bielej je šešuľka (niečo ako struk), ktorá je plná horčicových semienok, ktoré sa potom zbierajú na ďalšie spracovanie. Horčicové semienka v sebe ukrývajú až 30 % tuku, ktorý má ďalej v sebe aj účinné látky, ktoré z horčice (produktu) robia mierne štipľavú pastu. Horčica je výsledný produkt, ktorý sa vyrába mletím horčicových semienok.

Horčicové semienka sa tiež používajú aj ako zelené (rastlinné) hnojivo, pretože obsahujú cenné látky, ktorými oživia pôdu a zlepšia jej kvalitu. Tak isto horčicové semienka v produkte horčici majú veľký význam pre naše zdravie a určite by sa horčica nemala vytratiť z nášho jedálnička.

Najznámejšie druhy horčice

Plnotučná – táto horčica je asi najpredávanejšia. Je žltohnedej farby a aj jej konzistencia je jemná, bez hrubších častí. Plnotučná horčica sa vyrába z neodtučnených, jemne zomletých semien horčice bielej.

Kremžská – táto horčica sa vyrába z mletých semien žltých druhov horčice s prídavkom z neodtučnených, nahrubo zomletých alebo drvených semien horčice čiernej – obsahuje zreteľne tmavé časti šúp a jej chuť je sladkastá a jemne korenistá.

Dijónska – táto horčica sa vyrába z neodtučnených semien horčice hnedej (sarepskej), z ktorých sa odstránili šupy. Práve tieto horčičné semená obsahujú väčší podiel AITK, ktorý spôsobuje pálivejšiu chuť. Dijónska horčica sa volá podľa francúzskeho mesta, kde bola prvýkrát vyrobená a „objavená“ – Dijon.

Zdravie skryté v horčičnom semienku

Semienko horčice je malé, žlté a guľaté s jemne štipľavou chuťou. Semená po rozdrvení a primiešaní do vody uvoľnia arómu a príjemnú chuť. Obsahujú sacharidy, dôležité tuky, vlákninu, vitamíny A, B, C, E a K, minerálne látky ako horčík, železo, zinok, sodík a omega 3 mastné kyseliny. Napríklad obsah selénu v horčičných semenách poskytuje organizmu dobrú odolnosť pri tvorbe rakovinotvorných buniek a je to skvelý antioxidant.

Horčičné semienka majú v mnohých ohľadoch skvelé účinky na zdravie človeka a to napríklad: 

1. Podporujú trávenie: Keďže sú horčičné semienka skvelým zdrojom vlákniny, prirodzene tak napomáhajú tráviacemu traktu pri samotnom akte trávenia potravín. Vláknina je ľahko rozpustná a veľmi účinná. Pochopiteľne to má v konečnom dôsledku pozitívny vplyv aj na samotné vyprázdňovanie.

2. Zdravá pokožka: Horčičné semená majú vďaka svojmu obsahu skvelé účinky na kritické zápalové autoimunitné ochorenia. Semená pôsobia na pohyb zdravých enzýmov, ktoré podporujú liečebné účinky pri kožných chorobách.

3. Horčičné semená sú prospešné pre ženy v období menopauzy. Horčík a vápnik podporujú zdravie kostí v spojitosti s opotrebovaním počas menopauzy. Vápnik znižuje riziko vzniku osteoporózy u starších žien.
